Script writing (And re-writing, and re-re-writing, you get the idea!)
Directing
Cameraman
Lighting, though this tends to be collaborative
Editing
I have a colleague who does the sound, in fact he's just worked up the sound-track to my first short.
Unless I'm just doing a "Wish you were here" sort of montage film.

I tend to be a one-man band as well - until or unless someone steps in to take over some of the reins.
Probably why I like to make (very) short films...
For example ... The plan for my next epic is 5 or 6 (very) short 'stories', crammed into a 60 second saga ...

I too am a 'one man band'. Make documentaries, mostly about interesting or eccentric people. I was recently asked by a TV channel, "how many people in your crew?" and they were very surprised at my answer "one".

Re: What do you do in your filming world
Whatever's needed!
I've mostly been a one-man-band but I get far more satisfaction working with a team - or more specifically with one other person in the main.
I find two minds working on the idea, then the script, then staging, cinematography (OK - where we're going to stick the camera) and edit works really well. We feed off each others ideas and spot the flaws in each others ideas or work. It demands a certain amount of trust and respect and an ability to communicate without causing offence.
The bits I enjoy most are "sticking the pieces together" - whether that's working out how to make a documentary "flow", finding how to patch a hole or overcome a stumbling block in a plot or putting the edit together.
Actual "fiming" as in weilding a camera, I've just realised, comes failry low down the list of things I enjoy doing as a film maker.

Re: What do you do in your filming world
I'm another one man band. This is because I do AVs not films, although some of my AVs have video in them, and I mostly work on my AVs early in the morning when no one else in the house is awake to disturb me.
My attempts at videos & AV sequences can be found on my website- http://www.dragon-sanctuary.co.uk

Re: What do you do in your filming world
"One man band" when making short films like "one minute movies".
But when making epic stories and serious films I prefer a team.
Then I absolutely need someone for sound and lighting.
I always enjoy writing stories(scenario). I love doing camera work, editing and directing in a soft way.
I have done quite a lot of judging (local competitions, regional and international festivals) but I prefer to watch films not being a judge. I think I am too generous.

Re: What do you do in your filming world
I used to be very much a one man band, doing everything on my own, even down to some of the acting. But over the last couple of years i've been fortunate to have met lots of like minded and enthusiastic film makers. (All via the Red Carpet Screenings Film Festival!)
So nowadays i get the luxury of concentrating on one or two aspects to a production. Which is great! My skills tend to lie in Producing/Directing and Camerawork, although I do edit, grade, write, create visual fx, sound record, etc... but i tend not to do those too much these days.
