Producing .MP4 video files on a MAC, how can I do it

I am not a MAC user but I had a play with my mates MAC today (I'll stick to my PC, nuff said) and on exporting all his movies are MOV format, which is no good for our Solid State player.

I found an Export option to produce .MP4 video files and the quality seemed OK on his monitor but I kept running into a problem.

Everytime I tried to Export to .MP4 I had to select each parameter and adjust the default values to suite which is a real pain.

My question is, how can I make a custom output preset in FCP (with Snow Leopard installed)?

OR

Where in the Menu system can I find where the defaults are located to that I can adjust them?
